Monday: Pan-fried chicken breast with grilled vegetables
Ingredients:
Chicken breast 200g
1 bell pepper (red, yellow, green)
1 medium sweet potato
Half an onion
1 tablespoon olive oil
Salt to taste
Black pepper to taste
A pinch of rosemary (dried or fresh)
Method:
Wash the chicken breast and dry it with paper towels. Marinate evenly with salt, black pepper and rosemary, and let it sit for 15 minutes to allow the seasoning to penetrate the meat.
Deseed the bell pepper and cut it into pieces, peel the sweet potato and cut it into 1-2 cm thick pieces, and slice the onion. Put the vegetables in a large bowl, add olive oil and mix well.
Preheat the air fryer to 180℃.
Put the chicken breast in the air fryer basket and evenly spread the vegetables around it.

2 medium-sized potatoes
